Mushroom pizza with fresh herbs

Mushroom pizza with fresh herbs

Ingredients
- 1 ball of pizza dough (for a roughly 11-inch pizza)
- 1.5 cups sliced Shiitake mushrooms (add Oyster mushrooms if you have some as well!)
- 1 Tbsp each of chopped thyme and oregano, plus more sprigs for topping
- 1/4 tsp plus 1 pinch kosher salt, divided
- 1 Tbsp olive oil, plus more for drizzling
- 1 Tbsp fresh lemon juice
- 1-2 ounces goat cheese, crumbled
- 3/4 cup shredded mozzarella cheese
- 1-2 Tbsp finely chopped chives
Directions
Preheat oven to 425 Fahrenheit.
Clean the mushrooms with a damp paper towel or cloth and slice them. In a sauté pan or skillet, heat the 1 Tbsp olive oil to medium heat. Add the mushrooms, chopped herbs and 1/4 tsp kosher salt. Cook for about 5 minutes, stirring occasionally.
When mushrooms are tender, reduce the heat to low and add lemon juice. Remove from heat.
When the oven is ready, stretch the pizza dough into a circle and gently place the dough on a pizza stone.
Brush a thin layer of olive oil on the crust. Then top with mozzarella cheese in an even layer, followed by the cooked mushrooms and crumbles of goat cheese. Garnish with the chopped chives and additional thyme sprigs. Sprinkle with 1 pinch of kosher salt.
Carefully move the pizza to the oven. Bake the pizza until the cheese and crust are nicely browned, about 10-15 minutes.
Slice into pieces and serve immediately.
