Lion's Mane Mushroom Scampi
by Jonathan TovellIf you thought we were done finding ways to take advantage of the mild seafood flavour of the Lion's Mane, think again. This time, it's substituting shrimp for Lion's Mane in a scampi pasta.

Lion's Mane Mushroom Scampi

Ingredients
- 0.5 lb Lion's Mane mushrooms
- 3 Tbsp olive oil, divided
- 8 oz spaghetti/linguine
- 5 garlic cloves, minced
- 1/2 cup dry white wine
- juice of 1 lemon, divided
- 3/4 cup vegetable stock
- Salt, pepper and red pepper flakes to taste
- Parmesan (can sub for vegan parmesan or bread crumbs)
- Optional: 1 bunch parsley
Directions
Fill a large pasta pot with salted water and bring to a boil.
In a large pan/skillet, heat 1 Tbsp olive oil. Once hot, add sliced Lion's Mane mushrooms and fry over medium-high heat about 2 minutes per side. Finish with juice of half a lemon, salt and pepper. Remove from heat and set aside.
Once the pasta water comes to a boil, add pasta and cook according to package directions. Save some pasta water for your sauce to help reach your desired consistency.
Back to the pan/skillet: heat the remaining 2 Tbsp of olive oil over medium heat. Sauté the minced garlic for about 1-2 minutes. Add the white wine and simmer for 3 minutes until the liquid reduces by about half. Add the lemon juice and vegetable broth and simmer for 5 minutes until reduced and glossy.
Add the cooked pasta to the pan/skillet and toss to combine. Spoon in the reserved pasta water until it reaches your desired consistency. Add in the mushrooms. Season with salt, pepper and red pepper flakes to taste. Top with parmesan or your desired substitute.
